Using a potato masher, mash cauliflower and add butter and season with salt and pepper to taste. If cauliflower mash is too thick, thin out with a splash of milk. Set aside. To make ground beef mixture, heat a large skillet over medium-high heat, add butter. Once butter has melted, add onion and cook for 2-3 minutes. Add garlic and cook until fragrant. Add beef and cook until no longer pink. Stir in tomato paste, worcestershire sauce, thyme, rosemary and broth. Reduce to a simmer and cook for 10-15 minutes, or until beef broth has mostly evaporated. Stir in frozen vegetables and transfer to an oven safe baking dish. Top with cauliflower mash. Bake at 400ºF for 25-30 minutes. Enjoy! *To make things even tastier, try adding ½ cup of cheddar cheese on top of the cauliflower mash then bake. *If cooking from frozen, add on another 30-40 minutes to cooking time. If shepherd’s pie is browning too quickly, top with aluminum foil. If possible, to reduce cooking time, allow to completely thaw before baking. Chicken Chili Chili: 1 onion, chopped 1 red bell pepper, chopped 2 celery stalks, chopped 2 chipotle peppers in adobo sauce, minced 3 garlic cloves, minced 2 tbsp chili powder 1 tsp oregano 1 tsp cumin 2 cups chicken, cooked and shredded 2 cans red kidney beans 1 cup corn kernels, frozen or fresh 1 can crushed tomatoes 1 cup chicken or vegetable broth oil Salt and pepper to taste Cornbread topping: 1 cup cornmeal 1 cup flour 1 tbsp baking powder ½ tsp salt ¼ cup sugar 2 eggs 1 cup milk ¼ cup melted butter ½ cup cheddar cheese, shredded ½ jalapeno, minced ¼ cup green onion, finely chopped 1 jalapeno cut into circles for garnish To make chili, heat a large oven-safe skillet over medium-high heat and add oil. Add onion, celery and pepper. Cook for 2-3 minutes, or until softened. Add chipotle in adobo sauce. Cook until fragrant. Add chili powder, oregano and cumin and mix well. Add beans, chicken, corn, tomatoes, broth and season with salt and pepper to taste. Simmer for 25-30 minutes or until chili has thickened and vegetables are cooked through. To make cornbread, in a large bowl, whisk cornmeal, flour, baking powder, salt and sugar until well combined. In a smaller bowl, whisk eggs, milk and melted butter. Pour wet ingredients into dry and stir in cheddar cheese, jalapeno and green onion. Spread cornbread mixture over the chili and bake at 350ºF for 20-25 minutes, or until cornbread is cooked through. Enjoy! Stuffed Pepper Casserole 1lb ground turkey or chicken 1 onion, diced 3 bell peppers, chopped 1 green pepper, chopped 3 garlic cloves, minced 1 tsp smoked paprika 1 cup rice 1 14oz can diced tomatoes 1 ½ cups chicken broth ½ cup cheddar cheese, shredded Oil Salt and pepper to taste In a large skillet over medium-high heat, add oil. Add onion, peppers and turkey. Cook for 4-5 minutes, or until turkey is cooked through. Add garlic, smoked paprika and rice and cook until garlic is fragrant. Add broth and diced tomatoes and season with salt and pepper to taste. Reduce to a simmer and cook until liquid is absorbed and rice is cooked through. Transfer to an oven safe baking dish and bake at 375ºF for 20-25 minutes. If cooking from frozen, add another 30 minutes to cook time, or ideally allow to thaw completely and cook for 20-25 minutes. Does the cottage pie and where's the gravy? I lived in the UK for 15 years and I'm tired of hearing cottage pie called shepherd's pie and not having gravy. Yes shepherd's pie is made with lamb Shepherds herd sheep.

I grew up with beef in Shepard’s pie. Not a cauliflower fan, so will stick with potatoes. Also, we always added a layer of cheese on top (yummy). Loving your recipes.

Your pronunciation of Wustershire was perfect I'm from Manchester, England. I know these things. Theres also some debate amongst Brtis about, whether or not Shepherds pie should be with beef, because a shepherds wouldn't eat their own lambs. I don't really care as long as it tastes good! :D

I had to modify your recipe for Stuffed Pepper Casserole. I didn't have any ground turkey or chicken, just breakfast sausage and ground beef so I used beef stock and brown rice. It turned out great!!! When I go to the supermarket next week I will pick up some pork stock and maybe try a breakfast version of this. And I did have a Green Chili that I added.

As a twist on the creamy mash, I love to infuse some garlic clove in warm milk (dairy or non dairy, as you prefer) on the stove until the garlic is falling apart. Some garlic paste will do the trick as well. Then mix the infused milk and some broth (veggie or chicken) in the vegetable mash. If it's too runny, just stir on a medium high heat until the liquid is absorbed. And mix a hint of butter, just for the beauty of it.

Hi Sara Lynn! Question, would the food be prone to freezer burn with it sitting in the freezer for 4-6 months with only a foil wrapping?

If you have a deep freeze, you wont get freezer burn. A deep freeze is NOT the freezer connected to your fridge. A deep freeze NEVER does a frost free cycle to remove built up ice on the walls like your fridge freezer. I never store anything except fries and kid processed food in my fridge freezer.

I wrap the casseroles or lasagnas in foil and then put it in a plastic bag like she shows in the 5 fav freezer friendly foods video or assemble them in those individual foil trails, cover them in more foil and then in a bag, and have had no freezer burn at all. I also like to write the date I made it in the label so I know how long it has been sitting there.

These look delicious! So tempting to put ALL my casserole dishes in the freezer for 4 months...but sometimes I need those dishes to make a quick frittata or pan of brownies or breakfast popover.  Watching this, I was thinking that you could do a video about how to make chicken stock from those rotisserie chicken bones. (In the crockpot. With leftover parsley and other vegetables.) I do that all the time, but I'll bet your other viewers might appreciate it.

Did you pull out my mom's recipes because honestly she's been doing all these recipes for so long. She's been doing what she calls broken bell peppers same exact recipe doesn't bake though, but she has been doing that for almost 50 years because her first batch of kids hated eating the entire bell peppers. Shepherd's pie with mashed potatoes we have corn sometimes carrots and string beans but it Shepherd's pie in our house even though it is beef and we are mostly Irish. The other one is more what she calls a tamale pie which is very similar base but beef and black olives with the cornbread on top but she does a full thick layer of the cornbread because she does a deeper dish.
