Drain shells in a colander and run them under cold water to stop the cooking process. Set aside. In a large skillet heat olive oil. Add garlic and cook for 30 seconds. Add spinach and cook until it’s completely wilted. Allow spinach to cool and then finely chop it. In a large bowl combine ricotta cheese, eggs, parmesan, herbs, salt and pepper. Stir well. Add spinach and stir until combined. Pour a layer of tomato sauce on the bottom of a casserole dish or baking dish. Stuff shells with cheese filling and arrange shells in the dish. Cover shells with the remaining tomato sauce and sprinkle with mozzarella cheese. Freeze for up to 3 months. To cook, thaw the shells overnight in the refrigerator and bake them, covered with aluminum foil, for 30 minutes at 375°F or until they’re heated through. Enjoy! Black Bean & Sweet Potato Enchiladas 1 cup cooked rice ½ red onion, peeled and diced 1 red bell pepper, peeled and diced 1 large sweet potato, peeled and diced 1 can black beans, rinsed and drained 2½ cups salsa OR enchilada sauce 1½ cup cheddar cheese, shredded 12-16 tortillas Preheat oven to 375°F. Toss sweet potato with olive oil, salt and pepper and pour it onto a baking sheet. Bake for 15 minutes. After 15 minutes, remove sweet potato from the oven, add red onion and bell pepper, toss well and return to the oven for an additional 15 minutes. Pour mixture into a large bowl and add cooked rice, black beans and 1 cup of salsa. Mix well and set aside. Prepare a large casserole or baking dish by pouring 1 cup of salsa or enchilada sauce on the bottom of it and spreading it evenly. Gently heat tortillas so that they’re more flexible and easy to work with. Stuff each tortilla with 1/3 cup of filling and a sprinkle of cheddar cheese and roll them. Place each roll seam-side-down in the baking dish. Top with remaining salsa and cheddar cheese. Cover with aluminum foil and freeze for up to 3 months. To cook, thaw the enchiladas overnight in the refrigerator and bake them, covered with aluminum foil, for 30 minutes at 375°F or until they’re heated through. Enjoy! Twice-Baked Broccoli & Cheddar Potatoes 4 russet potatoes, washed and dried 2 tbsp olive oil sea salt ½ cup sour cream 1 cup cheddar, shredded 2 cups broccoli florets, lightly steamed salt and pepper Preheat your oven to 425°F. Wash potatoes thoroughly with a vegetable brush. Dry them well. Rub each potato with olive oil and season them with sea salt. Poke them a few times with the tines of a fork. Place them on a baking sheet and bake them for 1 hour or until they’re cooked through, flipping them once during cooking. Remove the potatoes from the oven and allow them to cool until they can be handled. Cut each potato in half lengthwise and scoop out the cooked potato leaving a ¼ border around the skin. Set skins aside. In a large bowl mash potatoes with sour cream, salt and pepper. Stir in shredded cheddar and steamed broccoli florets. Scoop filling into each potato skin. To freeze, place stuffed potatoes in the freezer for 20-30 minutes. Remove them from the freezer, wrap them individually in aluminum foil and place them in a zipper bag. Freeze for up to 3 months, To reheat, simply place foiled wrapped potato onto a baking sheet and bake for 30-40 minutes or until heated through. Using a potato masher, mash cauliflower and add butter and season with salt and pepper to taste. If cauliflower mash is too thick, thin out with a splash of milk. Set aside. To make ground beef mixture, heat a large skillet over medium-high heat, add butter. Once butter has melted, add onion and cook for 2-3 minutes. Add garlic and cook until fragrant. Add beef and cook until no longer pink. Stir in tomato paste, worcestershire sauce, thyme, rosemary and broth. Reduce to a simmer and cook for 10-15 minutes, or until beef broth has mostly evaporated. Stir in frozen vegetables and transfer to an oven safe baking dish. Top with cauliflower mash. Bake at 400ºF for 25-30 minutes. Enjoy! *To make things even tastier, try adding ½ cup of cheddar cheese on top of the cauliflower mash then bake. *If cooking from frozen, add on another 30-40 minutes to cooking time. If shepherd’s pie is browning too quickly, top with aluminum foil. If possible, to reduce cooking time, allow to completely thaw before baking. Chicken Chili: https://inspiredentertainment.com/recipe/chicken-chili-cornbread-topping/ Chili: 1 onion, chopped 1 red bell pepper, chopped 2 celery stalks, chopped 2 chipotle peppers in adobo sauce, minced 3 garlic cloves, minced 2 tbsp chili powder 1 tsp oregano 1 tsp cumin 2 cups chicken, cooked and shredded 2 cans red kidney beans 1 cup corn kernels, frozen or fresh 1 can crushed tomatoes 1 cup chicken or vegetable broth oil Salt and pepper to taste Cornbread topping: 1 cup cornmeal 1 cup flour 1 tbsp baking powder ½ tsp salt ¼ cup sugar 2 eggs 1 cup milk ¼ cup melted butter ½ cup cheddar cheese, shredded ½ jalapeno, minced ¼ cup green onion, finely chopped 1 jalapeno cut into circles for garnish To make chili, heat a large oven-safe skillet over medium-high heat and add oil. Add onion, celery and pepper. Cook for 2-3 minutes, or until softened. Add chipotle in adobo sauce. Cook until fragrant. Add chili powder, oregano and cumin and mix well. Add beans, chicken, corn, tomatoes, broth and season with salt and pepper to taste. Simmer for 25-30 minutes or until chili has thickened and vegetables are cooked through. To make cornbread, in a large bowl, whisk cornmeal, flour, baking powder, salt and sugar until well combined. In a smaller bowl, whisk eggs, milk and melted butter. Pour wet ingredients into dry and stir in cheddar cheese, jalapeno and green onion. Spread cornbread mixture over the chili and bake at 350ºF for 20-25 minutes, or until cornbread is cooked through. Enjoy! Stuffed Pepper Casserole: https://inspiredentertainment.com/recipe/stuffed-pepper-casserole/ 1lb ground turkey or chicken 1 onion, diced 3 bell peppers, chopped 1 green pepper, chopped 3 garlic cloves, minced 1 tsp smoked paprika 1 cup rice 1 14oz can diced tomatoes 1 ½ cups chicken broth ½ cup cheddar cheese, shredded Oil Salt and pepper to taste In a large skillet over medium-high heat, add oil. Add onion, peppers and turkey. Cook for 4-5 minutes, or until turkey is cooked through. Add garlic, smoked paprika and rice and cook until garlic is fragrant. Add broth and diced tomatoes and season with salt and pepper to taste. Reduce to a simmer and cook until liquid is absorbed and rice is cooked through. Transfer to an oven safe baking dish and bake at 375ºF for 20-25 minutes. If cooking from frozen, add another 30 minutes to cook time, or ideally allow to thaw completely and cook for 20-25 minutes. Spray muffin pan with oil (I use coconut oil) and fill with cooked oatmeal and then add your favorite toppings. Cover and place in freezer overnight and then pop out using a butter knife. I store these in freezer bags and to serve I will place 2-3 in a bowl with about a 1/4 cup milk or water to rehydrate them and pop in the microwave for 2-3 minutes, checking and stirring every minute. ***My Favorite Vegetable Soup*** Adopted from Alton Brown's recipe, but I substitute with my favorite veggies and/or what I have on hand http://www.foodnetwork.com/recipes/alton-brown/garden-vegetable-soup-recipe.print.html# 4 tablespoons olive oil 2 cups chopped leeks, white part only 2 tbs minced garlic 2 cups carrots, peeled and chopped 2 cups peeled and diced potatoes 2 quarts chicken or vegetable broth 16 oz can diced tomatoes 2 cups celery seasonings Cook veggies for 5-8 mins then add stock, increase the heat to high, and bring to a simmer. Once simmering, add the tomatoes. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 30 minutes. Remove from heat and add parsley. Season, to taste. You can also add beans or meat of choice to make this even more filling/substantial. TO STORE (this works with any soup) Allow soup to come to room temperature and put into plastic cups. Cover and freeze. To serve I remove from the freezer and allow it to thaw for 5 minutes and then push on the bottom of the cup to pop it out. You can reheat on the stovetop or in the microwave. ***Corn & Bean Salad*** 1 bag frozen corn (thawed) 1 bag frozen green beans (thawed) 1 can black beans 1 can kidney beans I combine all ingredients into a tupperware container and store this in my refrigerator - when i'm ready to serve I put portion in a separate bowl and add my favorite dressing (Annie's Chile Lime) - but any dressing would work! Italian dressing is also delicious with this. ***Lemon Chicken with Asparagus*** Full recipe can be found here: https://bakebroilandblog.wordpress.com/2014/05/26/lemon-chicken-asparagus-quinoa-bowl/ ***Turkey Meatballs*** These meatballs are a mix between a meatball and a meatloaf - the rice inside makes them moist and fluffy!! 1 lb ground turkey (or meat of choice) 1/2 grated large white onion (TIP, chew a piece of gum while doing this to minimize eye irritation!) 2 cloves chopped garlic 1 egg 1/3 cup rice (if using raw rice, the cooking time will be longer, if using cooked rice the cooking time is much shorter. I use long grain brown rice. You can also use breadcrumbs for a more traditional meatball) Seasoning -- salt, pepper, Italian seasoning Combine and roll into balls (approx the size of golf balls). Place into baking dish that's been saturated in marinara sauce and cover the balls completely in the sauce. Cover with foil and bake at 350. If using cooked rice or breadcrumbs, cooking time is 20-30 mins, if cooking with raw rice cooking time is 1.5-2 hours, you will want to check on them as it may vary depending on the type of rice used. I like to eat these with spaghetti squash. I wash and puncture a whole squab wit a knife 10-15 times and place in the oven at 350 for 1-1.5 hours. These meatballs store well in the freezer or refrigerator and can be used a variety of different meals including ---with your favorite pasta ---with quinoa or other grain ---on a sandwich or sub ---wrapped in lettuce with sauce ---with a side of veggies **About Me** Hi + welcome!! If you are ONLY eating one a day with your other meals, you have options. 1. Cut the recipe in half, or 2. Put 4 meals in the freezer and 3 meals in the fridge. 3. Take one out the night before and keep in the fridge to thaw. 4. Store the yogurt sauce in the fridge and add on after you've reheated. Set aside. Assemble salad by arranging all of the vegetables in a serving dish & topping with dressing. Herb & Garlic Baked Chicken Breast 1 (4-ounce) boneless skinless chicken breast 1 tsp olive oil 1 tsp garlic powder 1/2 tsp dried thyme 1/4 tsp dried oregano 1/4 tsp dried basil Salt & freshly cracked black pepper to taste Preheat the oven to 375ºF. Place chicken onto a nonstick or parchment lined baking sheet. Drizzle with oil & season with garlic powder, thyme leaves, oregano, basil & salt & pepper to taste. Bake chicken until it’s cooked through, about 25 to 30 min. Herb & Garlic Quinoa 1 cup cooked quinoa 1 garlic clove, grated 2 Tbsp chopped parsley Salt & freshly cracked black pepper Combine all of the ingredients together. Chili Stuffed Peppers Servings: 1 Cal: 602 Chili Stuffed Pepper 1 tsp vegetable oil 1/2 cup diced onion 1 garlic clove, minced 1/2 cup ground turkey 2 tsp chili powder 1/2 cup canned kidney beans, rinsed & drained 1 cup canned diced tomatoes 1 red pepper, halved & seeds removed (leave green stems on) Salt & freshly cracked black pepper 2 Tbsp shredded cheddar cheese Cilantro to garnish In a large skillet over med-high heat, heat oil. Add onion & cook for 1 to 2 min. Add garlic & cook until fragrant. Add turkey & continue to cook until it is no longer pink. Season with chili powder. Add beans & diced tomatoes. Cook until the mixture has thickened slightly, about 4 to 5 min. Season with salt & pepper to taste. Preheat the oven to 375ºF. Place red pepper halves into a baking dish. Fill each pepper half with chili mixture. Top with cheddar cheese & bake until peppers begin to soften, about 15 to 20 min. Garnish with fresh cilantro. Cilantro Lime Rice 3/4 cup cooked white rice 1/2 lime, zest & juice 1 Tbsp chopped cilantro Salt & freshly cracked black pepper to taste Combine all of the ingredients in a bowl. Healthy Chickpea & Dill Salad Servings: 1 Cal: 439 Marinated Dill Pickle Chickpeas on Spinach 1 cup canned chickpeas, rinsed & drained 1/4 cup diced cucumber 1/4 cup diced celery 2 Tbsp finely diced dill pickles 1 Tbsp minced red onion 1 Tbsp dill pickle brine 1 Tbsp olive oil 1/2 tsp Dijon mustard 1 tsp chopped dill 2 cups baby spinach Salt & freshly cracked black pepper to taste Lemon wedge for garnish Combine all of the ingredients in a large bowl. Mix well. Allow chickpeas to sit for at least an hour in the fridge before serving over baby spinach. Protein-Packed Tuna Salad Servings: 1 Cal: 418 Tuna Salad 1 can of tuna, drained 1 Tbsp minced red onion 1/2 tsp lemon pepper seasoning 2 Tbsp mayonnaise Combine all of the ingredients together in a bowl. Crunchy Romaine Salad 2 cups chopped romaine lettuce 2 radishes, thinly sliced 1/4 cup sliced celery Place the romaine into a serving dish. Top with radishes & celery. Sides Hard boiled egg Lemon wedge Healthy Beef & Broccoli Servings: 1 Cal: 518 Beef & Broccoli Stir-Fry 1/3 cup beef broth 1 Tbsp soy sauce 2 tsp hoisin sauce 1 tsp cornstarch 1 garlic clove, minced 1/2 tsp grated ginger 1 tsp sesame oil or vegetable oil 1 (4-ounce) striploin or sirloin steak, thinly sliced 1 cup broccoli florets 1/4 tsp sesame seeds 1 green onion, sliced on the bias In a small bowl, whisk together broth, soy sauce, hoisin sauce, cornstarch, garlic & ginger. Set aside. In a large wok or skillet, heat oil over med-high heat. Add steak & cook, tossing often until it is almost cooked through, about 3 min. Add broccoli to the pan & pour over the sauce. Cover pan & cook until broccoli is bright green & tender crisp, about 2 to 3 min. Garnish with sesame seeds & green onion.
