This is one of my FAVE, go-to recipes lately! It's gluten-free, vegan (dairy-free), grain-free, soy-free, high protein, high fiber... but tastes AMAZING! I hope you love it as much as I do 💕 RECIPE: 1. preheat oven to 350* F 2, combine the following ingredients in a food processor: - 15 oz can chickpeas, drained and rinsed well - 1/2 cup creamy, no-stir peanut butter - 1 tsp pure vanilla extract - 1 tsp baking powder - 1/2 cup granulated sweetener (I like 1/4c monk fruit/erythritol + 1/4 cup coconut sugar) 3. process ingredients together until totally smooth, adding a splash of non-dairy milk if needed 4. fold in chocolate chips 5. using a spatula, spread evenly into a greased baking dish 6. bake for 15-20 mins, until top is no longer wet/shiny looking 7. let cool at least 15 mins before slicing TAG ME IF YOU MAKE THIS! ▾ Open for recipe ▾ For this chocolate mousse, you'll need : • 200g of chocolate (7oz) • 2 tbps of plant based milk (25g) • 200g of chickpea liquid (7oz) • 50g of raw sugar (¼ cup / 1.7oz) ▸ Pour your milk in a sauce pan & set on low heat. ▸ Break the chocolate over it & let it melt very slowly, if possible at 40°c (104°F). Mix vigorously ▸ Once it’s all melted, leave aside so it cools down. ▸ Pour out the liquid from a can of chickpeas in a tall container. ▸ Add the sugar to the container & beat the liquid with an electric mixer. ▸ Take 2 big spoons of beaten chickpea liquid & blend vigorously with the chocolate. ▸ Take 3 spoons of the beaten liquid & this time, mix more gently with the chocolate. ▸ Take all the left beaten liquid & incorporate it the more delicately you can with the chocolate. ▸ Pour your mousse into grasses or cups. ▸ Bang the glasses on the counter and shake back and forth to level the mousse. ▸ Leave for at least 6 hours in the fridge. http://delicaroom.com/chocolate-mousse/ ▸ You can also keep the chocolate in the wraper & hit it against the edge of the counter, it’ll make chucks without messing up you kitchen. Here's an inside look into our vegan dark chocolate chickpea bark making process. We make our chocolate from scratch adding coconut sugar to make our 72% dark chocolate. People who have nut allergies can appreciate this snack because it gives you that crunchy texture that goes well with the richness of chocolate. If you are trying our chocolate bark for the first time you won't even realize that the crunch is chickpeas. Tempering gives chocolate that shine and prevents it from melting in your hands after you add ingredients to your chocolate or shape it. The process requires you to melt the chocolate and sugar to 115 degrees Fahrenheit, cool it to 80 degrees, and finally bring it back up to 90 degrees. After properly tempering we add our crushed roasted chickpeas and spread it on sheet trays that are lined with silpat mats. Once the chocolate hardens we break them in to pieces and we pack the barks into bags. A little while ago, I had a hankerin' for falafel. Unfortunately, on this day it was too freaking cold to go out. As in, the-air-hurts-my-face kind of cold. Generally, I take this as a sign that the universe is warning me against leaving the warm safety of home so I raided the cupboards to see what I could improvise. The result were these delicious baked black bean falafel balls! These vegan baked "falafel" are made with black beans which are even higher in antioxidants than chickpeas or garbanzo beans! They also happen to be gluten-free and free of most common allergens like soy or nuts. Get the printable recipe and full story here: http://www.marystestkitchen.com/vegan-baked-black-bean-falafel/ INGREDIENTS 1 cup black beans; cooked, rinsed and drained [236cc] 1/4 cup chickpea flour [60 cc] 1/2 cup onions, minced [120cc] 2 cloves garlic, minced 1 tablespoon cilantro or parsley, chopped [15cc] 1 teaspoon cumin [5cc] 1 teaspoon coriander, ground [5cc] 1/2 teaspoon salt [2.5cc] 1/4 teaspoon black pepper [1.25cc] Optional: 2 tablespoons vegetable oil (Canola, olive oil, etc) [30ml] DIRECTIONS Preheat oven to 375 F or 190 C. Prepare a baking sheet with parchment paper. Optionally, oil it to make a crispier crust. Combine all ingredients except the oil and mash until beans are mostly broken and the ingredients are thoroughly mixed. Stir in the oil if using. The oil helps with texture and crispness but can be left out. Spoon out the mixture on to the baking sheet to form balls about 1 inch in diameter. Try to place them evenly, leaving about 1 inch of space separating each falafel. Bake for 30 minutes. Optionally, you can flip the falafel at the 15 minute mark to ensure they brown evenly. Do you ever wonder how vegans get their protein? I get asked that question all the time, and my answer is always the same: there are small amounts of protein in everything we eat - especially vegetables, but I also get it from beans, grains, nuts, seeds, and other sneaky foods (I used to do a lot of protein powder but I have moved away from those due to too many allergies). My friend Tilita Lutterloh is a 400M sprinter and Olympic hopeful for 2020. She was my personal trainer for a time (and COMPLETELY transformed my body), and has been a dear friend since I met her in 2009. She is also a vegan athlete. Aside from other vegan athletes, no one is more qualified to talk about how vegans get their protein than Tilita is (seriously - check out her muscles!!). In this video, find out what she has to say, and join us as we create a vegan gluten free sweet potato chickpea burger that is Tilita approved! Here is what you'll need: 2-3 tbsp avocado oil 1 medium sized onion, chopped 1 medium carrot, small diced 2 medium sized yams, small diced 4 cloves garlic, minced 1/2 cup pistachios 1/2 cup pecans 2 cans chickpeas, rinsed 1 1/2 tsp Celtic sea salt 1/2 tsp cumin 1/2 tsp chili powder Preheat oven to 350F. 1. Heat the avocado oil over medium low heat. Saute the onions, potatoes, and carrots for about ten minutes or until soft. Add the minced garlic and toss to combine for about a minute. Take the veggies off the heat and set aside. 2. In a food processor, pulse the nuts until they have the consistency of parmesan cheese. Add your cooked veggies, chickpeas and spices to the food processor and blend until relatively smooth with some chunks here and there. 3. Line a baking sheet with parchment paper or a silicone mat. Use a 1/2 cup measuring scoop to form your patties, about 1/2 inch thick. 4. Bake the burgers at 350F from 20-30 minutes, depending on how hot your oven is, and rotating the pan half way through. Serve them as you would any other burger, and enjoy!
