Whisk everything together (except cilantro, peanuts, bibb lettuce, and turkey) for the sauce. 2. In a saucepan over medium-high heat, add turkey and cook through. When cooked, add sauce mixture and simmer over low heat for 15 minutes, until liquid is mostly reduced and sauce has thickened. 3. Stir in cilantro and peanuts and remove from heat. 4. Store, or serve with lettuce wraps. Garnish with chives and cilantro. ► BUFFALO CHICKEN CELERY: 1 cup chicken, cooked and shredded (can use breast, but don't be afraid to use legs or thighs too!) 2-3 Tbsp buffalo wing sauce 2-3 green onions, chopped salt & pepper, to taste 1. Mix everything together. Season to taste. 2. Add to celery sticks. 3. I was fully vegan for 7 months, but eventually found out I was genetically pre-disposed to celiac disease along with food intolerances such as legumes, yeast, sugar, and more! For several months I became obsessive with trying to cut all these things out of my diet and my food options became very limited. Because of my history with eating disorders, for one meal (on Saturday or Sunday) I reintroduce all the foods I was "not allowed" to have in order to maintain my mental health. I still strictly stay within my dietary restrictions 95% of the week. You may not agree, but this is what works best for me. ♡ Breakfast: Protein Bar Square Organics Chocolate Sea Salt Crisp Bar -- 220 calories, 10g protein, 12g fat, 22g carbs ♡ Lunch: Chocolate Banana Protein Pancakes 5.5 oz. bananas (mashed!) 1.5 servings (70 grams) Arrowhead Mills Organic Gluten Free Pancake Mix ½ packet (22 grams) Vega Sport Performance Protein 1 tbs. unsweetened cocoa powder 1 pinch of baking powder 1 tsp. healthy crazy fool Open For Recipe & Important Info & Stuff: These bars can be a healthy addition to a well planned whole foods vegan diet - that includes plenty of whole carbs, protein & good fats -with a big emphasis on the omega 3s! (& some vegan pizza just cuz). Plus I surprised myself at just how damn good these bars are straight out the freezer 😜.. * Also about the nuts/dairy in school part! Yes, I know kids can go into anaphylactic shock from nut allergies (& should be banned) - just wanted to state I think dairy should "also" be banned too because it's gross imo lol xx Ingredients: (I actually made way too much to fit in my small pan so I had left overs to make more with this amount!) - 3 cups of whole rolled oats - 2 cups of smooth almond butter - 1 & a half cups of grated carrot - 1/4 cup crushed raw pecan nuts (or walnuts) - 1/4 cup ground flax - 1 tsp ground cinnamon - 1 cup of desiccated coconut - 1/2 cup of maple syrup - 1/2 cup sultanas, raisins or dates - I used 1 TBSP of coconut oil to help them set (don't need to do this, skip it if you want them to be "pure" lol). - mix well & squidge down hard into a lined baking pan (have no idea of the dimensions of mine!) - leave to set in the freezer for at least 30 minutes. * These are Much better straight from the freezer so I would advise to store them in there! But if you want them softer then fridge will do (just don't leave them out!) My kids carve pumpkins trough all October so after a day or two we carved them I just cut the pumpkins up before they would go bad and bake them, After it's cold I put them into my vitamix with a little water and I have a pumpkin puree for this recipe. The traditional version of pancakes with syrup are a carb bomb but these are zero carbs without the syrup, 5 net carbs with as noted below, and are generous on fat and protein. These are great for the weekend but can be stored in the fridge for up to four days or frozen for months to reheat and enjoy whenever. Macros: 3 servings (4 pancakes per serving) Calories: 252 | Fat: 22g | Protein: 11g | Carbs: 5g (all carbs from sugar free syrup) Ingredients: 4 ounce, Organic Cream Cheese (Bar) 4 egg, Large Brown Eggs 1 tsp, Vanilla Extract 0.62 tsp., Himalayan Pink Sea Salt 1 tsp(s), Spices, nutmeg, ground 5 drops, Stevia Clear Liquid Stevia 1 Tbsp (14 g), Kerrygold Butter Unsalted 0.25 cup, Vermont Pancake Syrup {Sugar Free} Directions:  Add cream cheese, eggs, vanilla, stevia, salt and nutmeg to a blender. I used a NutriBullet. Blend for about 20 seconds until ingredients are combined. Heat your pan over a low heat. Add 1/2 tablespoon of butter to the pan. Pour about 1/8 cup batter into the heated pan once the butter has melted evenly in the pan. Repeat process and add additional 1/2 tbsp butter to the pan when needed as you continue to cook the remainder of the batter. Top pancakes with butter and sugar free syrup. Enjoy!

Looking for a delicious yet super simple breakfast bar/slice for lunch? Well, look no further. This Raspberry Banana Quinoa Slice is so easy to make and tastes amazing. INGREDIENTS 2 Ripe Bananas (mashed) 1 Tsp Vanilla Extract 1 TBSP Maple Syrup (optional) 1 C Cooked Quinoa 1/2 C Coconut (shredded or fine) 1 TBSP Chia Seeds 1/3 C Raspberries (Frozen is fine). Add more if you want to add some raspberries to the top for decoration. INSTRUCTIONS 1. Mix all the wet ingredients - mashed banana, vanilla extract and maple syrup 2. Add the quinoa, coconut, chia seeds and raspberries and stir 3. Line a tray with baking paper. 4. Spoon the mixture into the pan and press down until tightly compacted. 5. Optional - add more raspberries to the top 6. Bake at 180C for approximately 30 minutes 7. Remove from the oven and wait for the slice to cool down. 8. Cut into the desired size and enjoy. 9. I really wanted to make a delicious, healthy (well, healthier) candy bar that the whole family could eat. And I experimented a bit and it turned out great! Hope you like it too :) Healthy Candy Bars: By: Ollie Umma Candy Crust: (Made in a 3 cup rice cooker) 1 Cup Shredded Unsweetened Coconut 2 Tablespoons + 2 teaspoons of Coconut Flour 4.5 Tablespoons of Coconut Oil 1 Tablespoon Coconut Palm Sugar (or your choice of sugar) Pinch of Salt (optional) Filling: 10 Pitted Dates (process until smooth or use a knife until smooth) 1 (or more) Tablespoon of Hot Water Mix until smooth enough to spread Coating: A bar of Dark Chocolate 2 Tablespoons of Coconut Oil Topping: Raw Cocoa Nibs Sea Salt Directions: Mix all of the Candy Crust ingredients together until well incorporated. Rub coconut oil onto the rice pot with a paper towel to prevent sticking. Press into the rice cooker pot until it is nice and firm. Cook on one white rice cycle. Let cool to room temperature and chill in the fridge until ready to use. When the crust has chilled: Cut into desired size. For the filling: Process the dates in a food processor with a spoonful of hot water until smooth. Alternatively, you could also chop the dates with a knife until very smooth and place in a bowl and mix with a spoonful of hot water until it is easy to spread. Spread filling onto crust. Melt the bar of chocolate with coconut oil (30 seconds at a time in the microwave) and coat the candy. Sprinkle with cocoa nibs and a sprinkle sea salt. Set in the fridge and enjoy! This is one of my FAVE, go-to recipes lately! It's gluten-free, vegan (dairy-free), grain-free, soy-free, high protein, high fiber... but tastes AMAZING! I hope you love it as much as I do 💕 RECIPE: 1. preheat oven to 350* F 2, combine the following ingredients in a food processor: - 15 oz can chickpeas, drained and rinsed well - 1/2 cup creamy, no-stir peanut butter - 1 tsp pure vanilla extract - 1 tsp baking powder - 1/2 cup granulated sweetener (I like 1/4c monk fruit/erythritol + 1/4 cup coconut sugar) 3. process ingredients together until totally smooth, adding a splash of non-dairy milk if needed 4. fold in chocolate chips 5. using a spatula, spread evenly into a greased baking dish 6. bake for 15-20 mins, until top is no longer wet/shiny looking 7. let cool at least 15 mins before slicing TAG ME IF YOU MAKE THIS! In this episode, I feature one of my FAVORITE easy keto desserts that I ate when first starting out with keto, my Best Ever Keto Pumpkin Pie Cheesecake on a deliciously low-carb walnut and butter crust! For those with nut allergies, you can omit the crust and enjoy it just the same! In food processor, place all crust ingredients. and pulse until dough like consistency, scraping down sides if necessary. 3. Press dough into 8 or 9 inch round baking dish and bake for 12-15 minutes until lightly brown. 4.Remove and let cool for 20 minutes. Pumpkin pie cheesecake mixture: 1. In large bowl, whip softened cream cheese, and pumpkin pie mixture until smooth. Hand mixer or stand mixers work the best! 2. Add in confectioner's swerve, vanilla, pumpkin pie spice, and heavy whipping cream and beat until well combined and smooth. 3. Spread cheesecake mixture on cooled walnut crust and refrigerate for at least two hours. 4. Enjoy!
