This week’s family friendly meal prep, we make freezer friendly meals for our Instant Pot/pressure cookers. All these recipes are slow cooker friendly as well. Time are already placed next to recipe if you want to forward to certain ones or refer back to this video ♥️No stuffed Cabbage Soup: 4:11 min ♥️Pina Colada Chicken 3:40 min ♥️Spicy Italian Pasta: 6:28 min ♥️Lemongrass coconut shredded chicken 2:18 min 👉Pina Colada Recipe:https://www.copymethat.com/r/mzvn8A0/instant-pot-pina-colada-chicken-recipe-a/ 👉Instant Pot Shredded Lemongrass Coconut Chicken: One bag of lemon basil sauce chicken (click here for sauce http://bit.ly/2rEj8uJ) half a bag of frozen fajitas or 1 fresh bell pepper and 1 onion sliced. One can of full fat coconut milk, 2-3 pounds chicken breast. ½ cup chicken broth if not cooking from frozen. If cooking from frozen then broth is not needed Directions: Place all ingredients in the instant pot, place lid on and close pressure valve. Set poultry function for 45 min (only if frozen) If not frozen then set for 25 min. When done shred chicken apart and let sit for 10 min on the keep warm function. Who wants to come home & Cook, on Hot Summer Days.. Just take out a make ahead meal, put it in the Oven, & Dinner is done! The Meat Sauce I used in my Lasagnas, was a Mixture of (3) Meats, Ground Beef, Italian Sausage, & Pork Sausage, I used (1) Chopped Sweet Onion, Green & Red Bell Peppers, & Seasoning.. Herb & Garlic Quinoa 1 cup cooked quinoa 1 garlic clove, grated 2 Tbsp chopped parsley Salt & freshly cracked black pepper Combine all of the ingredients together. Chili Stuffed Peppers Servings: 1 Cal: 602 Chili Stuffed Pepper 1 tsp vegetable oil 1/2 cup diced onion 1 garlic clove, minced 1/2 cup ground turkey 2 tsp chili powder 1/2 cup canned kidney beans, rinsed & drained 1 cup canned diced tomatoes 1 red pepper, halved & seeds removed (leave green stems on) Salt & freshly cracked black pepper 2 Tbsp shredded cheddar cheese Cilantro to garnish In a large skillet over med-high heat, heat oil. Add onion & cook for 1 to 2 min. Add garlic & cook until fragrant. Add turkey & continue to cook until it is no longer pink. Season with chili powder. Add beans & diced tomatoes. Cook until the mixture has thickened slightly, about 4 to 5 min. Season with salt & pepper to taste. Preheat the oven to 375ºF. Place red pepper halves into a baking dish. Fill each pepper half with chili mixture. Top with cheddar cheese & bake until peppers begin to soften, about 15 to 20 min. Garnish with fresh cilantro. Cilantro Lime Rice 3/4 cup cooked white rice 1/2 lime, zest & juice 1 Tbsp chopped cilantro Salt & freshly cracked black pepper to taste Combine all of the ingredients in a bowl. Healthy Chickpea & Dill Salad Servings: 1 Cal: 439 Marinated Dill Pickle Chickpeas on Spinach 1 cup canned chickpeas, rinsed & drained 1/4 cup diced cucumber 1/4 cup diced celery 2 Tbsp finely diced dill pickles 1 Tbsp minced red onion 1 Tbsp dill pickle brine 1 Tbsp olive oil 1/2 tsp Dijon mustard 1 tsp chopped dill 2 cups baby spinach Salt & freshly cracked black pepper to taste Lemon wedge for garnish Combine all of the ingredients in a large bowl. Mix well. Allow chickpeas to sit for at least an hour in the fridge before serving over baby spinach. Protein-Packed Tuna Salad Servings: 1 Cal: 418 Tuna Salad 1 can of tuna, drained 1 Tbsp minced red onion 1/2 tsp lemon pepper seasoning 2 Tbsp mayonnaise Combine all of the ingredients together in a bowl. Crunchy Romaine Salad 2 cups chopped romaine lettuce 2 radishes, thinly sliced 1/4 cup sliced celery Place the romaine into a serving dish. Top with radishes & celery. Sides Hard boiled egg Lemon wedge Healthy Beef & Broccoli Servings: 1 Cal: 518 Beef & Broccoli Stir-Fry 1/3 cup beef broth 1 Tbsp soy sauce 2 tsp hoisin sauce 1 tsp cornstarch 1 garlic clove, minced 1/2 tsp grated ginger 1 tsp sesame oil or vegetable oil 1 (4-ounce) striploin or sirloin steak, thinly sliced 1 cup broccoli florets 1/4 tsp sesame seeds 1 green onion, sliced on the bias In a small bowl, whisk together broth, soy sauce, hoisin sauce, cornstarch, garlic & ginger. Set aside. In a large wok or skillet, heat oil over med-high heat. Add steak & cook, tossing often until it is almost cooked through, about 3 min. Add broccoli to the pan & pour over the sauce. Cover pan & cook until broccoli is bright green & tender crisp, about 2 to 3 min. Garnish with sesame seeds & green onion. In a large bowl or measuring cup, whisk together eggs & milk. Season with salt & pepper to taste. Set aside. Line or grease a 6-cup muffin tin. Divide asparagus, swiss cheese & chives evenly between muffin cups. Fill each muffin cup with egg mixture. Bake until eggs have set & tops are lightly golden, about 15 to 20 min. Salad 3 cup arugula 1 cup diced cucumber 1 cup halved cherry tomatoes 1/4 cup sliced red onion 1/4 cup white wine vinaigrette Sides 1/2 cup cubed cheddar cheese Baked Oatmeal & Apple Chips Servings: 4 Cal: 599 Banana Nut Baked Oatmeal 1/2 cup mashed banana 1 1/2 cups old fashioned rolled oats 1/4 cup brown sugar 1/2 tsp ground cinnamon 1 tsps baking powder 1 tsp vanilla extract 1/2 cup 2% milk 1 egg 1/2 cup chopped walnuts or pecans Preheat oven to 375ºF & line or grease a 12 cup muffin tin. Set aside. In a large bowl, combine all of the ingredients together. Scoop batter into prepared muffin tin. Bake until mixture has completely set & is lightly golden, about 30 min. Apple Chips 5 apple, thinly sliced 1 tsp ground cinnamon Preheat oven to 225ºF. Arrange apple slices on a parchment lined baking sheet. Sprinkle with cinnamon. Bake until apples begin to dehydrate, about 1 to 2 hours. Flip apples & continue to bake until they are completely crisp. Sides 1 cup trail mix Protein-Packed Parfait Servings: 1 Cal: 571 Parfait Ingredients 1 cup vanilla Greek yogurt 2 Tbsps chopped almonds Quinoa Salad 1/2 cup cooked quinoa 1/2 cup mixed berries 1 tsp chia seeds 1/8 tsp ground cinnamon 1 tsp maple syrup In a large bowl, toss together quinoa, mixed berries, chia seeds, cinnamon & maple syrup. Family Friendly Freezer Cooking and Meal Prep | 7 recipes | 12+ meals
I have really started to get into meal prepping and in this video I take you on my first attempt. I will be showing you 7 family friendly recipes which will make more than 12 meals for my family of four (with leftovers). I have 2 young boys who are very fussy eaters and they ate all of these meals with minimal fuss (except for the chicken and corn soup). I love trying new recipes and I will give you my opinions of these recipes below. BBQ Pulled Chicken - So easy to make however the chicken was quite dry after coming out of the slow cooker. Although after freezing I thought that the chicken was less dry. It is great make ahead lunch or dinner option. Lasagne - cant go wrong with this classic and I think it freezes well (even tastes better after freezing) Shepherds Pie - Another classic recipe however I think the potato seemed a little floury after freezing but still tasted great. Chicken and Corn Vermicelli Soup - Really tasty however the noodles definitely need to be cut short so that you can pick up with a spoon. Bacon and Egg Pie - Such an easy and tasty recipe however I would not freeze this one again. It was a little soggy after freezing. Parmesan Chicken - Absolutely loved this dish and it froze well and was so moist. Banana Bread - Not as good as the store bought however still a tasty option. I am a SAHM of 2 boys (5 and 8) and have started doing YouTube as a bit of a creative outlet and to meet new friends online. Please comment on my videos if there is anything you would like to know. 👩‍🍳 Cook With Me: MAKE AHEAD and FREEZE Homemade Waffles Recipe | Large Family Freezer Meals
WAFFLES! Who loves waffles?! What is even better than homemade waffles? I'll tell ya, it’s make ahead homemade waffles that are also freezer friendly! Cook with me this big batch of homemade freezer waffles! I use both of my waffle makers from ALDI. PLUS, since I filmed this the middle of a snow and ice storm, we also make homemade snow cream with the kids!! Here’s the make ahead waffle recipe: 12 eggs 12 cups flour 8 cups milk 4 cups oil 1 cup sugar 4 tbs Vanilla 4 tbs cinnamon 8 tbs Baking powder 2 tsp salt Mix together well while preheating waffle irons. Use 1/2-1 cup of make ahead waffle mix in each waffle iron depending on waffle iron size. Feed your family, then freeze the extra waffles for upcoming make ahead freezer meals! I just set a frozen breakfast freezer bag out in the refrigerator the night before. For breakfast the following morning I quickly reheat the waffles in the microwave. They’re wonderful!! Homemade Snow Cream Recipe 1 gallon of fresh snow 2-3 cups of milk (depending on your desired texture) 2 tbs cinnamon 2 tbs Vanilla 1 cup sugar Mix all snow cream ingredients together and serve! The kids will love this frozen snow cream treat!!

Mix Ranch and Taco packets with can of chicken broth. Pour over chicken in crock pot and cook on High for 4 hours. When done remove chicken to shred to be used in tacos or for sandwiches. Chicken Tetrazzini 16oz pkg linguine pasta 3-4 cups of cooked shredded chicken 1 cup of frozen peas 1 cup of sliced mushrooms 2 14oz cans chicken broth 1 cup fat free half and half 6 tbsp flour 6 tbsp butter 1/2 cup Romano cheese 2 tbsp chopped fresh parsley 1 cup shredded Italian cheese s/p to taste 1/2 tsp red pepper flakes 1 tsp minced onion 10-12 crushed Ritz crackers Cook pasta according to pkg directions. Melt butter in a large sauce pan. Add flour and mix well to make a roux. Slowly add broth mix well.Add S/P, pepper flakes & minced onion. Remove from heat and add half & Half. In large bowl mix pasta, peas, mushrooms, chicken, Romano cheese, and fresh parsley. Cover in prepared sauce and mix to combine. Pour into prepared dish and cover with cheese and crushed Ritz. Cook for 35 min in a 375 oven or cover and freeze. Nacho Casserole 1.5lbs ground meat 2 cups salsa 1 can black beans 1 cup frozen yellow corn 1/2 small onion chopped 3 cups tortilla chips crushed 1 16oz container sour cream 1 can sliced or chopped olives 1 cup grape tomatoes sliced 1 cup of Mexican cheese blend In a large pan cook ground meat and onion until done. Stir in salsa and cook for 20 minutes. Add black beans and corn and cook through. In a 9x13 place crushed chips in bottom of pan, cover with meat mixture. Spread sour cream on top of meat. Sprinkle tomatoes and olives on top and cover with cheese. Cover with foil and bake @ 375 for 35 minutes. Penne Melanzana 1 small eggplant chopped 1 zucchini chopped 1 small onion chopped 3 cloves mince garlic 1 14oz can of fire roasted tomatoes 1 14oz can of tomato sauce s/p 1 tsp basil 1 tsp garlic powder 1/4-1/2 tsp red pepper flakes 10oz cooked penne Shredded Italian cheese Cook pasta according to pkg instructions. In a large pan cook eggplant , zucchini and onion until soft. Remove from pan and brown ground meat until cooked through. Add veggies back into the pan with the diced tomatoes, tomato sauce and spices. Cook until heated through remove from heat. Add pasta & 1 cup of cheese to pan and combine well. Place mixture in prepared pan, cover with remaining cheese. Cover with foil and bake in a 375 oven for 35 minutes. Hello Friends! I'm Mickey and I love all things organized! Bulk Cooking, Meal Planning and Freezer Meals - A Quirky Journey Podcast #116

Enter Bek Freeman, a good friend of Jo’s who is an inspiration to all of us wanting to eat well, despite crazy busy lives! Bek is a teacher, has three young children, her husband works away a lot, and she has an illness which can debilitate her for hours when she’s really tired – so she really has to think ahead with the meals for her family. Her priority is her family’s health, and she has been on a mission to find ways to keep them all eating well, even on days when she doesn’t have the time or energy to do a lot of from-scratch cooking. Bek plans and prepares all the dinners for three months – (a whole school term!!) – on the school holidays, writing out meal plans and ingredients lists and packing her freezer with wholesome meals for the family. How do I get started with meal planning and bulk cooking?” In this episode, Bek shares her tips and secrets for successful meal planning and bulk cook-ups. And don’t worry, bulk prepping doesn’t mean you only eat ‘frozen, reheated food’ – and you don’t have to cook for three months – but having a meal plan and some basic meals in the freezer can really save you time, money and your sanity!
