If you are ONLY eating one a day with your other meals, you have options. 1. Cut the recipe in half, or 2. Put 4 meals in the freezer and 3 meals in the fridge. 3. Take one out the night before and keep in the fridge to thaw. 4. Store the yogurt sauce in the fridge and add on after you've reheated. If you are going to freeze meals put yogurt in a separate container and place in the fridge then add on once it's been reheated! ------------------ ------------------ BROCCOLI MIND BLOWING TRUTH BOMB: The idea that steaming broccoli is better for you is a common misconception. Several studies have shown that while cooking can degrade some nutrients, it can enhance the availability of others. As a result, no single cooking or preparation method is superior for preserving 100 percent of the nutrients in a vegetable, and that includes eating vegetables raw. Boiling has been found to be better for carrots, zucchini and broccoli, than steaming, frying or serving them raw. Since the best vegetables are the ones you will actually eat, taste should be the defining factor when you decide on a cooking method. The best way to get the most out of your vegetables is to enjoy them a variety of ways -- raw, steamed, boiled, baked and grilled. BREAKFAST MEAL PREP This is a very simple way to start prepping your breakfast in advance. These egg muffins are also great for on the go snacks! Eat as many as you need to fit your macro goals. Add whatever you'd like, they are SO versatile. If you aren't running out the door in the morning, feel free to make some healthy toast or some type of side to go with your egg muffins :) -------------- A note about yolks if you are concerned... The liver produces large amounts of cholesterol naturally. When we eat a lot of eggs (high in cholesterol), the liver produces less instead. The more important issue is what type of eats you use. YOU SHOULD NEVER EAT "SUPERMARKET" CAGED EGGS as they have come from chickens that are 'grain fed' which increases the omega 6 to 3 ratio to (25 to 1). Not to mention they have been injected with hormones and antibiotics. Only use certified organic free range eggs. These chickens are fed a plant based diet of grass, fruits and vegetables. SALMON MEAL PREP This salmon meal prep is so delicious with the quinoa, pesto and bell peppers! Can eat cold or reheat in a pan. Try mixing everything together when you reheat - it's AMAZING. And yes, you can double the recipe and put more in the freezer. We give you a base recipe and then our two favorite combinations, peanut butter and jelly overnight oats and chocolate banana overnight oats! YUM *JUST TO BE CLEAR* We are not trying to tell vegans or anyone who has dairy sensitivities to stop drinking almond milk. We are speaking to people who DO NOT drink whole milk because they believe FAT is UNHEALTHY. Ounce) Can Fire Roasted Diced Tomatoes 1 Cup Frozen Corn Juice of 1 Lime 2 Teaspoons Chili Powder ½ Teaspoon Cumin ½ Teaspoon Cayenne Pepper Salt and Pepper to Taste Cubed Avocado and Parsley for Serving 3 Boneless Skinless Chicken Breasts 1 Teaspoon Chili Powder 1 Teaspoon Garlic Powder 1 Teaspoon Oregano | Instructions | Heat olive oil in large skillet over medium high heat. Add onion and jalapeno and cook until softened. About 3 minutes. Add garlic and cook until fragrant, about 1 minute. Add black beans, tomatoes, corn, quinoa, chicken stock, chili powder, cayenne, cumin, and lime juice. Season to taste with salt and pepper and stir. Bring to a low simmer and reduce heat to medium low. Simmer for 20 minutes with the lid on stirring occasionally. Season chicken on both sides with chili powder, garlic powder, oregano, salt and pepper. Cook on a hot grill until the internal temperature reaches 165°F. Cut into slices and add to Mexican quinoa. Serve with diced avocado and fresh parsley.
